Yield: 6 - 8 Servings
Sweet Potato - 4 lbs (unpeeled)
Salt - 1 tsp
Black Pepper - 1/2 tsp
Butter - 6 oz (room temperature)
Salted Butter - 2 oz (room temperature)
Evaporated Milk - 6 oz
Peel and dice sweet potato into 1/2 inch pieces.
Wash and pour into boiling water.
Allow to cook until tender (about 10 to 15 minutes).
Immediately strain and pour back into pot used to boil it in.
Add salt, black pepper, butter, salted butter and evaporated milk to sweet potato.
Mash until the sweet potatoes have broken down and all the ingredients are fully incorporated.
Taste for salt.
