Yield: 1 (8 x 8 Inch) Tray
4 Cups Flour, sifted
2½ Tbsp Baking Powder
3 Tbsp Brown Sugar
2 Tsp Salt
3 Tbsp Butter, chilled
9 Oz Water
Place flour into a medium mixing bowl. Add the baking powder, sugar and salt. Mix well to combine.
Cube butter into small pieces and place into the flour. Rub butter into the flour to evenly distribute until it resembles that of small crumbs.
Make a well in the center of the flour and add the water a little at a time while mixing in the flour until it forms into a ball of dough. Knead for 10 minutes working the dough until it comes together and adopts a smooth like finish.
Place dough back into the bowl and cover with a damp tea towel and allow it to rest for 2 hours.
Meanwhile grease the baking tray with butter and lightly dust with flour. Set aside.
Lightly dust the counter you are working on and roll dough to 1 inch thickness and similarly to shape the perimeter of the baking tray.
Place dough into the baking tray and push ends of the dough flush to fit the ends of the tray. Cover with damp tea towel and let rest for 25 minutes.
Preheat oven to 350 degrees Fahrenheit and put to bake for 30 minutes or until golden brown.
Remove roasted bake from the oven once cooked and take out from the tray. Serve while still hot.
