How To Bake Trini Coconut Drops

12 oz flour
4 oz margarine
3/4 cup brown sugar
2 tsp baking powder
1 egg
1 tbsp evaporated milk
Pinch of salt
1 cup grated coconut
1/2 tsp vanilla essence




  1. Grease tray and set aside.

  2. Set oven to 375°F.

  3. Sift flour, salt and baking powder in a bowl.

  4. Cut margarine into flour until it resembles fine breadcrumbs.

  5. Stir in sugar and coconut.

  6. In a separate bowl, whisk the egg and then add milk to the egg.

  7. Add the egg and milk mixture to the dry ingredients and mix until combined and it has a stiff consistency.

  8. Using two teaspoons, scoop and drop equal amounts of batter onto the greased tray. 

  9. Bake at 375°F for 15 minutes or until the drops have a nice golden brown colour.

  10. Place on cooling rack to cool or enjoy warm!
