Christmas Fried Pies Recipe by Chef Shaun 🇹🇹 Foodie Nation


Ingredients

AP Flour - 3 cups (sifted)

Brown Sugar - 1 1/2 tbsp

Instant Yeast - 2 tsp

Salt - 1/2 tbsp

Baking Powder - 1 tbsp

Margarine - 1 1/2 tbsp

Lukewarm Water - 8 fl oz


Method

1. In a bowl, add flour, sugar, yeast, salt and baking powder.

2. Mix before cutting in margarine.

3. Make a well in the middle and add water.

4. Knead dough into a smooth ball (about 8 minutes).

5. Cover and allow to rest for 30 minutes to 1 hour.

6. Divide into 8 or 12 pieces.

7. Shape into smooth balls.

8. Cover and allow to rest for 20 minutes.

9. Roll out to a 4” disc before filling with your premade fillings.

10. Seal and fry in preheated vegetable oil heated to 325F.

11. Fry until golden brown.


Beef Pastelle Filling

Vegetable Oil - 1/8 cup

Onion - 1 1/2 cups (finely chopped)

Chive - 1/4 cup (finely chopped)

Scotch Bonnet Pepper - 1 tsp (finely chopped)

Pimento- 1/4 cup (finely chopped)

Garlic- 1/4 cup (finely chopped)

Chadon Beni- 1/2 cup (finely chopped)

Fine Thyme- 5 sprigs

Minced Beef - 1 lb

Tomato Paste - 1/3 cup

Brown Sugar - 2 tbsp (optional)

Capers- 3 tbsp (optional)

Raisins- 3 tbsp (optional)

Olives- 10 (optional)

Salt - 2 tsp

Black Pepper - 1/4 tsp


Method

1. Heat vegetable oil.

2. Once heated, add onion, chive, pepper, pimento, garlic, chadon beni & thyme.

3. Stir, cover and allow to cook until onions are translucent (about 5 minutes).

4. Add beef, ensuring to break it up into smaller pieces.

5. Cover and allow to cook for 2 minutes.

6. Add remaining ingredients.

7. Taste for salt.

8. Allow to cool completely.


Pork Stuffing

Unsalted Butter – 4 oz

Onion - 1 1/2 cup (finely chopped)

Garlic – 1/3 cup (finely chopped)

Pimento – ½ cup (finely chopped)

Salt – 2 tsp

Black Pepper – ½ tsp

Minced Pork – 1 lb

Chopped Olives – 2 tbsp (optional)

Capers – 2 tsp (optional)

Raisins – 1/4 cup (optional)

Tomato Paste – 2 tbsp

Brown Sugar - 1 tbsp (optional)

Celery Leaves – 1/3 cup (finely chopped)


Method

1. Heat butter.

2. Once heated, add onion, garlic, pimento, salt & black pepper.

3. Stir, cover and allow to cook until onions are translucent (about 5 minutes).

4. Add pork, ensuring to break it up into smaller pieces.

5. Cover and allow to cook for 2 minutes.

6. Add remaining ingredients.

7. Taste for salt.

8. Allow to cool completely.
