How To Make A Geera Pork & Plantain Pizza
Geera Pork & Plantain Pizza, yes you read that right, is on the menu in the "How To?" kitchen this week.
Ingredients
All Purpose Flour- 2 1/2 cups
Salt- 1 1/2 tsp
Brown Sugar- 1 tsp
Yeast- 1 tbsp
Oil- 2 fl oz
Warm Water- 8 fl oz
Ripe Plantain - 1 lb
Vegetable Oil for frying - 16 fl oz
Pizza Sauce - 12 fl oz
Cheese - 2 lbs (grated)
Geera Pork - 1 lb
Method
In a bowl, mix flour, salt and sugar.
Mix in yeast.
Make a well in the center of the bowl
Add oil and warm water.
Knead for 5 to 10 minutes until a smooth ball of dough forms.
Place in a greased bowl and cover with a damp cloth.
Set aside and allow to rest and rise for 1 hour or until doubled in size.
Preheat oven to 400F.
Peel plantain and slice into 1/2” rounds.
Pour oil into frying pan and heat over high heat.
Once heated, fry plantain until golden, ensuring not to burn.
Place on a paper towel and allow excess oil to drain off.
Slice into thin strips and set aside.
Once dough has doubled in size, remove from bowl and place on a lightly dusted (flour) counter.
Divide dough in two, place one to the side and roll out the other into a round disc 1/4” thick.
Place on greased pizza tray.
Top with sauce, cheese, pork & plantain.
Place in oven and bake for 20 to 25 minutes; ensuring to rotate halfway through.
Check crust for doneness (the underside should be golden brown).
Slice and enjoy!
