How To Make Smoky Grilled Wings


All eyes are on the grill once again as Dev shows Nat how he prepares his “ole school” Smoky Grilled Wings.

INGREDIENTS


3lbs chicken wings

2-3 tbps chopped chadon beni

2-3 tbps chopped chive

2-3 tbps celery

1.5 tbps chopped garlic

1 tbps chopped ginger

3-4 pimentoes, chopped

Half a scotch bonnet, chopped

1 tbps chopped broad leaf thyme

1-2 tbps plain vegetable oil.

1 lime

Salt and pepper


METHOD


Combine all seasonings except for the lime and salt in a blender.

In a bowl, add in chicken wings and oil.

When seasoning are blended, pour on the chicken wings, mix thoroughly.

Place in Ziploc bag or cover in a container.

Marinate overnight, or for minimum of 30 mins - 1 hour.

When ready to cook, light the barbecue pit and get the charcoal white hot.

Place wings on the grill, sprinkle with salt, and then cover with all vents open.

Wait 17 mins, then open up, and turn each piece individually.

Cover again, and let cook for a further 17 minutes.

Remove cover, and then adjust the wings on the “hot spots” on the grill to get the skin

crispy with a slight char.

Remove from grill, sprinkle salt on each piece, and then squeeze lime juice liberally over all.

Serve immediately!
