How To Make Trini Stew Chicken Liver
Natalie helps Chef Jeremy prepare a special Stew Liver as she makes her debut on ‘How To? Foodie Nation’:
Yield - 6 Persons
Cook time – Approx. 45 minutes or less
Prep time – 30 minutes
Ingredients:
Liver – 2lb (cleaned and cut into 2-inch pieces)
Washing of Liver:
Lime juice – 4 tbsp
Water – 6 cups
Seasoning:
Fine Thyme – 2 tsp (finely chopped)
Chive – 2 tbsp (finely chopped)
Pimento – ½ cup (finely chopped)
Garlic – 2 tbsp (finely chopped)
Onion – 2 tbsp (finely chopped)
Chadon beni – 2 tbsp (finely chopped)
Salt – to taste
Black pepper – 1 tbsp
Clove powder – 1 tsp
Celery – 2 tbsp (finely chopped)
Ingredients for Browning:
Brown Sugar – 4 tbsp
Oil – 1 tbsp
Method
Washing of Liver:
In large bowl, add liver, lime juice and water
Mix and allow to soak for 10 minutes then rinse under water for 3 minutes.
Allow excess liquid to drain off.
Seasoning of liver:
In large bowl, add cleaned liver and season with, thyme, chive, pimento, garlic, onion, chadon beni, black pepper, clove powder, celery.
Add salt to taste and mix until fully incorporated.
Allow to marinate for at least 1 hour.
Cooking of Liver:
Place heavy metal pot or skillet on stove.
Turn on heat and add ingredients for browning.
Allow sugar to caramelize until it is just over golden brown as illustrated in the video.
When the sugar is turning from brown to black add seasoned liver and stir thoroughly for 2 minutes.
Cover and allow to cook for 15 minutes.
Add water a little at a time only if needed.
After 15 minutes; check for doneness.
Remove from heat after cooking.
