Margarita Cheesecake Cups


Ingredients:


1 pre-made graham cracker crust (or make your own with graham cracker crumbs, butter, and sugar)

12 oz cream cheese, softened

4 oz sweetened condensed milk

1/2 cup margarita mix

1/4 cup lime juice

1 teaspoon lime zest + more for Garnish


Instructions:


In a large bowl, beat the cream cheese until smooth and creamy.

Add the sweetened condensed milk, margarita mix, lime juice, and lime zest to the cream cheese and mix until smooth.

Pour the mixture into the graham cracker crust and spread evenly.

Refrigerate the cheesecake for at least 3-4 hours or until set.

Once set, garnish with additional lime zest.

Enjoy!


Mango Daiquiri Vinaigrette


Ingredients:


1/4 cup mango daiquiri mix

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

1 tablespoon lime juice

Salt and pepper to taste


Instructions:


In a small bowl or jar, whisk together the mango daiquiri mix, olive oil, vinegar, honey (if using), and lime juice.

Season with salt and pepper to taste.

Mix well until all ingredients are combined, and the dressing has emulsified.

Drizzle over your salad and enjoy!

Store any leftover vinaigrette in the refrigerator for up to a week.


Margarita Glaze


Ingredients:


1/2 cup margarita mix

2 tablespoons Green Seasoning

1 tablespoon lime juice

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon water (optional, to dissolve cornstarch)


Instructions:


In a small saucepan, combine the margarita mix, green seasoning, and lime juice. Bring to a simmer over medium heat.

Stir occasionally and let it simmer for about 5-7 minutes, allowing the flavors to combine and the glaze to thicken slightly.

If you want a thicker glaze, dissolve cornstarch in the water and slowly add it to the simmering mixture. Stir constantly until it reaches your desired consistency.

Once thickened, remove from heat and let it cool slightly.

Use the glaze to coat shrimp, fish fillets, or even drizzle over grilled vegetables for a tangy, citrusy finish.


Mango Daiquiri Popsicles (Coconut-Free)


Ingredients:


1 1/2 cups mango daiquiri mix

1/2 cup orange juice

1 1/2 tablespoon lime juice

1/2 tbsp chopped mint


Instructions:


In a blender, combine the mango daiquiri mix, fresh mango, water (or juice), and lime juice. Blend until smooth.

Pour the mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.

If you want to add some extra texture or flavor, place a mint leaf or a small piece of lime zest into the molds before filling them.

Insert sticks into the molds and freeze for at least 4 hours or until solid.

To release the popsicles, run warm water over the outside of the mold for a few seconds.

Serve and enjoy a refreshing, tropical treat!
