Water - 3 Cups
Brown Sugar - 4 Cups
Cinnamon - 1 Stick
Scotch Bonnet Pepper - To Taste
Red Food Coloring - 2 Tbsp
Salt - 1/2 Tsp
Green Mango - 6
In a pot over medium heat, add water and brown sugar and mix until sugar is dissolved.
Add cinnamon, pepper, food coloring and salt and mix until fully incorporated.
Add mango and mix until all the pieces are well coated.
Bring to a boil and let cook for 40 minutes. (mixing every 10 minutes)
Remove from heat and let cool completely before storing in an air tight container.
*Edit: You can eat the Red Mango once it has cooled down.
