Tantalizing Curried Oxtails Recipe by Chef Shaun 🇹🇹 Foodie Nation



Yield – 6 to 8 Servings


Ingredients

Oxtails – 2 ½ lbs

Lime Juice – ¼ cup

Salt – 1 tsp + more

Black Pepper – ¼ tsp

Green Seasoning – 1 cup

Curry Powder – 2 tbsp + 2 tbsp

Coconut Oil – ¼ cup

Onion – 1 cup (thinly sliced)

Pimento Peppers – 1/3 cup (thinly sliced)

Garlic – 5 cloves (crushed)

Cumin (Geera) Seeds – ½ tbsp

Fenugreek (Methi) Seeds – 2 tbsp

Coconut Milk – 2 cups

Whole Hot Pepper – 1

Water


Method

1. Wash oxtails in water and lime juice.

2. Drain off excess liquid.

3. Season with salt, black pepper, green seasoning & 2 tbsp curry powder.

4. Cover and allow to marinate in your refrigerator for 4 hours or overnight for best results.

5. Heat medium to large pot over medium to high heat.

6. Add coconut oil.

7. Once heated, add onion, pimento & garlic.

8. Allow to cook until onions are translucent (about 90 seconds).

9. Add cumin, fenugreek & remaining curry powder hydrated in water.

10. Stir and allow mixture to reduce to a thick paste.

11. Add oxtails, stir, cover and allow oxtails to release its natural juices (about 5 minutes).

12. Stir and repeat for another 5 minutes.

13. Add coconut milk, hot pepper and enough water to submerge oxtails.

14. Bring mixture to a boil before reducing to a simmer.
