Cassava - 3 lbs
Sweet Potato - 3 lbs
Chadon Beni (Culantro) - 1/2 cup (finely chopped)
Wish-Bone Ranch Salad Dressing - 1
Wash cassava and sweet potato.
Peel and cut cassava into wedges as illustrated, and submerge in water.
Peel and cut sweet potato into fries as illustrated, and submerge in water.
Boil cassava wedges until tender (about 12 minutes).
Drain and submerge in cold water.
Pour oil into pot and heat to 325°F for sweet potato, and 375°F for cassava.
Fry both until golden brown.
Season with salt and chadon beni.
Serve hot with Wish-Bone Ranch Salad Dressing.
